Job Title: Head Chef – Kitchen Manager

Job Description
- We are currently looking for a qualified and innovative Head Chef-Kitchen Manager to increase the efficiency and profitability of our kitchen operations.
Duties and Responsibilities
- Responsible for supervising kitchen staff, coordinating and assigning the food orders.
- Responsible for ensuring that kitchen staff strictly follows the guidelines of CQSMA (cleanliness, quality, service, maintenance and atmosphere).
- Responsible for keeping files on the various employees under their supervision and make regular updates about performance and conduct.
- Be approachable and available to the kitchen staff and address any concerns or problems that arise.
- The kitchen manager is highly involved in interviewing kitchen staff and negotiating contracts.
- Responsible for the training and scheduling of staff.
- Maintains an inventory of materials used and suggests strategies to cut kitchen costs.
- The kitchen manager estimates the number of products that needs to be prepared and predict possible fluctuations.
- Initiating and maintaining procurement of the kitchen needs on a daily, weekly, or monthly basis
- Disbursement of fund for procurement
- Secure the best and most appropriate vendors for company procurement.
- Ensuring the guidelines and principles of food safety and sanitation is adhered to at all times
- Frequently review and assess all kitchen procedures to ensure employees maintain a safe and hygienic cooking environment.
- The kitchen manager with knowledge in preparation and storage, is responsible for every item that is produced.
- The kitchen manager participates in production, creating menus and making decisions about menu substitutions when specific ingredients are unavailable.
- The kitchen manager is responsible for ensuring the menu is adhered to.
- The Kitchen Manager is responsible for ensuring that Kitchen Equipment and gadgets are properly used, preserved and maintained.
- The Kitchen manager is responsible for scheduling maintenance of the company’s kitchen equipment periodically
- Responsible for reporting on production, waste, training requirements, production plan for bulk orders, seasonality and quality of produce as well as competence, strengths and weaknesses of kitchen staff as well as production challenges that may arise.
- Ensure all products are delivered in a clear and professional manner
- Ensure all products comes out simultaneously, in high quality, and in a timely fashion
- Pace the number of orders to allow adequate time for assembling quality food products
- Package take-out items and complete accurate transactions
- Clean and organize store room
- Conduct cycle counts to identify loss and improve in-stock position
- Sort/Receive product from vendors, ensuring physical count matches purchase order/invoice, and resolve discrepancies when they do not match
- Put away product to inventory locations, in accordance with applicable instruction and expiration requirements
- Identify and return where necessary defective stock.
- Report on items received- Weight, Date, quantity, vendor and/purchaser.
- Manage waste and spoilage through strict compliance with ‘FIFO’ practices (First In, First Out)
Required Skills
- Minimum of a catering/culinary certificate
- Minimum of 1-3 years business experience in a well-planned kitchen in a structured organization
- Experience in hotel catering and/restaurants is a must
- Good understanding of catering principles and regulations
- Measurement/numeric skills is desirable
- Have good communication skills
- Mastery of intercultural sensitivity
- Must be fluent in English
- Excellent organizational and multitasking skills
- Ability to work under strict deadlines.
- Must reside in Victoria Island axis of Lagos or willing to relocate.
Remuneration
N100,000 (monthly salary).
